Break down Copilot metrics by model.

🎤 Context

Our organization is currently testing other models. It would be great to have a "Copilot Models" view to better understand model adoption

✌️ Possible Implementation

I started digging into the implementation. It looks like the Copilot Metrics API always returns Default for the model.

Yet, I think we are limited for implementing this until GitHub updates (or fixes?) their APIs.
