Update Docker Compose template for S3 storage migration

This PR updates the Docker Compose template with the necessary configuration changes to support the S3 storage implementation and new upload service.

Changes include:

• Replace PictShare with MinIO for object storage
• Add uploads migration service to migrate old data to S3
• Configure app_router with access to old uploads data
• Add required service dependencies
• Use versioned beabee/beabee-minio Docker image
