1 gallon whole fat milk with no additives (not fortified) 1 1/2 cups short grain white rice, we use sushi rice 1 cup white sugar 1 pint heavy cream OR 1 stick of butter 2 tablespoon of cornstarch
Pour milk in large pot, place on stove on medium-high Wash rice Combine washed rice with 2 cups of water in a bowl and microwave for 5-7 minutes Once milk is boiling, add microwaved rice and water in boiling milk Finish cooking rice in milk, until the rice is very soft, stir constantly Add cream OR butter and let boil, stir constantly Add sugar Make a slurry with cornstarch and water Add cornstarch slurry to the pot Stir constantly for 2 minutes Turn heat off Ladle rice pudding into individual serving bowls
