Some options:

Create a pre-populated dummy account and provide the login info on login pages, ex. "To preview features, login with..." (maybe reset this overnight)
Store dummy data in files and populate pages if not logged in, with overlay of "sign in" (maybe overlay is dismissible but content would be view only)
