But how can I cite this work?

On the right side on the main repository page (https://github.com/idiap/coqui-ai-TTS) there is a small link "Cite this repository" to generate a citation, including in bibtext format. You might just need to update the version number. This actually works in any Github repo that includes a CITATION.cff file.
