MdePkg: Complete MockUefiBootServicesTableLib

This commit completes the MockUefiBootServicesTableLib by adding the
missing functions and data structures.

This includes MockSimpleTextIn and MockSimpleTextOut protocols for the
EFI_SYSTEM_TABLE.
