Upgrade aws-msk-iam-auth

Just upgrading the IAM auth provider. This makes AWS SSO setup work out-of-the-box.
Should solve #4355

Upgrade dependency: aws-msk-iam-auth: 1.1.7 to 2.1.0
This JAR is heavily shaded, so no issues should occur 🤞

Built locally.
I had to skip the Java tests (ran with -DskipTests because I run on Apple Silicon and there are issues.
I connected to an MSK cluster with IAM auth and it worked. I have SSO setup.

I see that this change was already proposed here, and that this project is on pause.

I've moved for now to use kafbat/kafka-ui fork (bleeding edge) which already has this.

There's no need, they already have a new enough version of aws-msk-iam-auth.
